What I love best about Christmas



This is the first time I've made a cheesecake where it's cracked on the top like that. Also the first time I've made one using my new KitchenAid stand mixer. Wonder if I over-mixed or under-mixed, or what?

But it's amazing how very relaxing baking is for me. This is the first Christmas without Dad, and it's been a little rough around here the last week or so. But the minute I put that cheesecake in the oven, I felt *lighter.* Hmm. Baking: cheaper than therapy. Therapy: fewer calories than baking. It's a dilemma.

And then, just for kicks, I made this:





That's a Wilton Gingerbread Tree, which looks *vastly* different on the box. Not bad for someone who's never done it before, though. I'm thinking I probably shouldn't have eaten all that leftover icing, though.

Heh... I feel like that about baking, too, especially bread. There's really nothing like bread dough to get out your aggressions. ;-)
